I have developed products with all the ingredients needed to reduce malnutrition and improve food security. The products are egg-corn powder with shells, milk-corn powder, meat-corn powder (beef, pork, chicken) and bean-corn powder with all the necessary ingredients needed for infants, children, pregnant women, lactating mothers and adults. The products serve as main or supplementary food and can be used to make bread, biscuits, meat-pie, porridge etc. The products provide all-inclusive nutrients needed, for healthy preservation, easy-to-prepare within a short time and very portable. The products included bones and shells in the formulation based on the hidden nutritional values that I have discovered which formally were neglected in our food. The bones and shells contain minerals.
My motivation was derived from World Food Program, UNICEF, and United Nations High Commissioner for Refugees. According to World Food Program statistics estimation for 2017 state that: 800 million people do not have enough food to eat on daily basis, 12.9 percent of the population is undernourished, the majority from developing countries. Poor nutrition causes nearly 45 percent of death in children under age five, 3.1 million each year. In Ghana, 24 percent of child mortality cases are associated to undernutrition and the annual cost are estimated to 4.6% which in equivalent to 6.4GDP. Currently, we heard about Somalia, Nigeria etc. how food insecurity and malnutrition issues are threatening people's lives. The bones and shells provide some essential nutrients within have been neglected.
